When hiking in the Valais, you may well come across a couple of  true locals, fighting, stamping and snorting, fired on by the wild  gestures of the spectators backing one or the other of the opponents. Don’t panic — these are the true queens of the Valais — typical Eringer cows, fighting for their place in the hierarchy of the herd, as they have done since time immemorial. And if you look a little more closely, you will see that the wild spectators are in fact locals calling you over to join them for a glass of slightly sparkling Fendant — one of the finest white wines from the Valais. At the same time, they may well enlighten you on this impressive old tradition.
